Is there a recommended method that allows for the responsive email in portrait view but change to desktop view when rotated to landscape? It seems to work this way nicely on android but not so much on IOS as its either a set width or the responsive view fluidly filling the width/space.

You could try targeting the landscape view with media queries. I don’t build fluid, but with breakpoints in media queries and my mails show the desktop version in landscape iPhones as far as I can see, but I can imagine if you’re using fluid or hybrid the width is too small and it triggers the stacking of blocks. By targeting for instance for max 600px and min 480 you could add styles to force the fluid code to show desktop I think by overriding the fluid blocks and forcing them to scale down.
